Adventures in Eureka Springs

What do you do when you're stressed? What do you do when it is cold and miserable outside? Do you dream of warmer climates and relaxation? I DO! I DO!

I'm not going to go into detail about how I'm SO not into winter this year, or how the snow is just obnoxious, or about how we have winds like the city of Chicago, or how the lack of daylight is not making me CrazyLo but BitchyLo. No, I wouldn't dare fill a blog post with that kind of negativity.

What I will do is show you the birthday trip I've planned for myself. Last year, I had a great birthday until 10PM hit. It was at this unfortunate hour that everyone was drunk but me and bailing to go home and pass out. Pschh..whimps. :) That resulted in me being a cry baby who felt the birthday was a flop. Then I realized I'm not 21 and maybe I shouldn't be planning a drunk fest every year for my birthday anymore. So, without further ado.

This year we'll be visiting Eureka Springs, AR. I've heard so many great things about this town. Full of old buildings, cobblestone streets, shopping, spas, restaurants, a huge Jesus statue, and beautiful springs; this town will be a great low-key couples vacation. Everyone I've spoken with told me how we had to find a cute bed and breakfast and make a romantic weekend of it. Well, bed and breakfasts are great and all, but I'm not into staying in a room that looks like grandma's house. No floral wallpaper or creepy dolls in this girl's room. I want something relaxing, romantic and sleek. BUT, I want to be spoiled by the beautiful nature and scenery found in the Ozarks.

And what did my google stumble across?

That, my friends, is a treehouse. But don't you dare think I'm going to be camping in any way. I'll do enough of that during truck show season.

My sweet husband has allowed me to book 3 nights at this beautiful place where we will hopefully get some massages, shopping, eating, hiking and bike riding in. Oh, and bubble baths with wine. This is a requirement. I'm so excited and so happy I have something to look forward to. And what can be better than spending a romantic weekend with my best friend in the entire world? *gush*

Super delicious amazingly wonderful lettuce wraps

I made a D-E-L-I-C-I-O-U-S dinner this evening. (Wow, how embarrassing would it be to misspell that. HA!) To make things even better it was EASY. Like so easy it should have tasted terrible.

I was craving some lettuce wraps today after all the chili I could handle the last few days. And I thought a nice break from salad would be good too. I looked on the weight watchers recipes and didn't see what I was looking for. So, I went to my friend Google. This recipe is from delish.com and is compliments of Amy and Marty Wolff from a previous season of the Biggest Loser. Hey hey, Reppin' BL in Crazy Lo's house!

Amy and Marty Wolff's Chicken Lettuce Wraps
Ingredients:
1 Tablespoon olive oil
1 lb. ground chicken breast
2 Tablespoons all natural or low-fat peanut butter (I used whipped)
2 Tablespoons low sodium soy sauce
2 Tablespoons low sodium teriyaki sauce
1 small can drained water chestnuts
1/2 chopped onion
Handful of cashew nuts
Romain lettuce Leaves

Directions:
1. In a pan, heat olive oil. Add ground chicken and brown; stir occasionally to separate the meat.
2. Add peanut butter, soy sauce, and teriyaki sauce to the chicken until well mixed.
3. Add water chestnuts, onion; and cashews.
4. After chicken is completely brown, let simmer for about five minutes; stirring every couple of minutes.
5. Cool and serve on large lettuce leaves.

Hooomygosh, so good. I split into 4 servings and plugged into the recipe builder. Using the Peter Pan Whipped Peanut Butter, the points came out to be 8 for a HUGE serving. Yum. This will be a repeat.

And lastly, I apologize for no pictures. As I said, our camera drowned on New Year's Eve. However, I cashed in some credit card rewards points, and I will be getting a new Canon very shortly!
